1.
Whatever you do, discuss with them before the wedding about their back up plans. No one can know ahead of time what the weather will do that day. Sometimes the back up plan is less than ideal, but you have got to work around it. For future reference consider having something in your contract to put the liability for these issues on the client.

 2.
a good majority of the time someone is going to throw the schedule off, this is part of what happens with weddings, many times it is the bride who is running late... or the flower people, or someone else that should be doing something related to the wedding, as you keep doing weddings, you will learn this happens a lot. I encourage brides to give people earlier times to have more of a "time cushion" built in to allow for people to not be on time because then if they are "late" they are not as late as they would have been if they had been given a later time.

 3.
in my experience I have been surprised to get special requests from clients of certain images converted to B&W, but once I know they like them, I tend to offer up some more conversions as I am processing.... but my line of thinking is to give them the option of both, the great part is that the client lets you know which ones they would like to see in B&W which almost always indicates some of their favorite images as well.

 4.
I want to add one more thing to look at. When I bought my first Canon camera I was having problems with focusing until I changed some settings and got things working the way I needed them to. Link to Canon explaining how it works and how to adjust this setting. This one thing kept me from wanting to abandon my Canon.

 5.
You know it could have been that the caterer wanted to make sure the food was ready at the right times, etc. If they don't know when the people are going to be eating, then the caterer may have issues with the food getting cold, etc. It doesn't sound unreasonable for any vendor to ask for information regarding the schedule for the day.

 6.
Find out what is important to her, if you feel you are on the same page, then why not? For my first wedding I asked my uncle to take pictures and he did an awesome job as I never saw a bad picture he took ever.

 7.
I would explain to them that you need to retain the copyright and have their release on file that you can display their images in your portfolio or galleries. Basically they are asking that you don't sell their images to anyone else, which doesn't seem to unreasonable. They are still allowing you to use them for your own marketing, but you must retain your copyright to do so. What they really want is a personal usage license.... but in this license you should also restrict them from selling the images to anyone else since they are not allowing you to do so either.

 8.
in all honesty $500 for second shooting is a good rate, but I am surprised that they expect you to edit them too, if that is the case, I am assuming they like your processing. most important thing, make sure you have a contract between you and them that covers details like you mentioned, use of images, etc.

 9.
here is another idea to throw in, since your 7D takes HD video, why don't you capture video? if you found a good spot or two, you could put it on a tripod and be in front of the camera. if I were a family member involved in the wedding, I would be focused on family and being involved, but if I felt the need to use a camera and want to be low key, I would want to use something like a G11, to me there is something about having a camera that you can fit in your pocket and still get good shots with.

 10.
if you get a kit lens that is 17-50mm or whatever it is, it should be wide enough to bring you out wide enough on a crop body. I got a few sony bodies 2 yrs ago and I really like the results I am getting with them. All of the minolta lenses work just fine. Only one lens didn't work because it is a 3rd party lens, however my tamron lens (new) is awesome! if your budget wasn't limited, the a850 would be ideal, so to budget things you are going to need to step down a few models in the lineup.
