1.
Hi

You just need to use the flash as an Auto Flash, non TTL. Your flash has a light sensor to stop the light when it is just enough. You can set it to work manually: give the ISO and the Aperture (the same that you just fix in the camera), then the flash gives you the right amount of light in the burst.
It has to work on any camera.
Just a link with some tips on how to do it: http://www.learn.usa.canon.com/resources/articles/2011/speedlite580exii_article.shtml
Good luck
Ernesto

 2.
I have a Canon 7NE and I think it is a great camera.
I think you also need to remenber than the new models 7N and 7NE support E-TTL II flash protocol. The older models only do E-TTL.
So, if you have a modern Canon flash... it would be wise to go for the newer models.

 3.
I just used my Canon Elan 7NE yesterday, shooting some slide film using ECF. It was so fun and easy to use that I really regret not having it in my 60D now.
I use prescription glasses but ECF worked well for me anyway.
Unfortunately I don't think Canon will bring it back to any DSRL.
