Yes, but how can I load photoshop into my 5D, so that I can get a preview of the picture style's effect right away?
Don't listen to the crowd. Use the monochrome mode to get a preview in, yes that's right, mono instead of colour. When you're done, do the conversion in post.
About your original question, the PSE software seems particularly difficult, or useless, when it comes to adjusting curves/levels for R, G and B independent of each other. This makes things really complicated.

So, would this work with an R72 IR-filter and handheld times, say a Holga?

The 1hr lab I have used a couple of times, would only do it as the last roll of the day. Most Kodak 1hr labs here (gothenburg, sweden) won't do it at all anymore.
Kodak ektachrome VS turned out very nice with green/yellow hues. Fuji sensia 100 wasn't as good, way too red.

Sheldon, I did my own lensbaby a long time ago. I would make one for my HBL500C/M, if it wasn't for the shutter being in the lens. Plenty of examples on my blog http://graciform.my-expressions.com Mostly in the 300D archive. It can vignette if you really twist it, but otherwise it performs pretty well, and much better than the lensbaby.

Which is the worst EOS wide angle, zoom or prime, when it comes to
light fall-off? I know how to do it in PS and I use two Holgas, but
I'd like to get as much as possible straight from my EOS 3 & 300D,
well mostly the EOS 3.
