leopoldstotch
To elaborate, choose the "monochrome" picture style for B&W.

stillbound
but the real question is "why?" You are throwing away info for no reason
zigzag
Or you can always take (JPEG) pictures in colour and then later on your computer you can make them B&W. This means you always get both options. A free editor such as Google's Picasa will allow you to do things like:
1. Convert to B&W
2. Convert to a particular tone (e.g. Sepia tone)
3. Enhance photos for exposures, contrast, etc, etc.
mendel_leisk
To Joseph, you can shoot raw format and set picture style to "monochrome". The raw retains the full color info, nothing is really changed, except *certain* software (Canon's Digital Photo Pro might be the beginning and end of the list) recognize that "style", and default to presenting the image in monochrome. You can play around with "black and white" filters in DPP. The camera's lcd display also shows the image in black and white if the style is set to monochrome, which is kind of cool. So you're not throwing away anything, but it really is pure smoke-and-mirrors, kind of like setting a certain printing dpi tag.

gerrymorgan
But see this thread for a discussion of why you would be much better off shooting in colour and using software to convert to monochrome in post-processing. KenPapai
Is it posible your 400D did not come with a manual? Besides being given the trivial, kindergarten level answers, you should read your manual... please.
