1.
I backpack with the Kinesis Long Lens Pack and find it very good. It is as compact as it can get for a lens this size and gives a fair degree of protection. However, the lens only fits in it with the hood reversed. With the camera and a 2x extender it is a snug fit. I tried the larger Lowepro Lens Trekker 600 but did not like the bulk.
When driving alone I much prefer the camera on the passenger seat even if it might get hit this way. I missed too many shots by fumbling with the pack. On rough roads I wedge the lens between seats and some other luggage.

 2.
Alan, if you take the battery out of the 5D3 then the transmissive LCD panel in the viewfinder loses power and becomes less transmissive. This is the reason for the effect you described.
The panel displays the AF points and some other stuff. It is powered even if the camera is switched off.
