I moved from a very slow focussing Tokina 70-200/2.8 to a used 70-200/2.8 IS. I too thought that spending the big $$ for the 70-200/2.8 IS was not the wisest use of my limited funds, BUT the money is now long gone (and the pain mostly forgotten) while the lens remains: I don't regret the decision.
Just to keep life interesting: Have you thought about the Sigma 70-200/2.8 ?

I don't shoot portraits.
If I were looking for a portrait camera I would look for a body that handled lights well (Speedlites or studio strobes) and could be used tethered (wired or wireless) to a monitor.

AI Servo works best if you activate it prior to getting to the 'money shot' - start tracking BEFORE the real action begins. "The shutter button has two positions. Canon U.S.A. is still on target to begin shipments of the EOS-1D Mark III to its authorized dealers by the end of May. Another option might be a Canon S3 IS (~$425) or the new S5 IS (~$500) -- both are priced close to the G7 (~$450). A 58mm Close-up Lens 250D or 500D (~$85) could be added if you need to get really close.
Is there a store you can go to with your wife and try some sample shots using the various options with different jewelry products ?

Canon EOS 20D Alleged Defects Investigation
"The Canon EOS 20D Digital Camera was initially launched by Canon U.S.A in
September 2004 as a high-end consumer and professional level digital camera. The
national law firm of Lieff Cabraser Heimann & Bernstein, LLP, is currently
investigating consumer complaints concerning the Canon EOS 20D digital camera.
The complaints include allegations that the Canon EOS 20D model prematurely
fails either right before or right after the one-year warranty period ends.
We are reviewing complaints concerning problems with the shutter system of the
digital camera. Specifically, the camera shutter of the EOS 20D digital camera
allegedly begins to fire repeatedly until the camera battery is removed. Once
the shutter problem arises, the only way to resolve the issue is to send the
camera to the manufacturer for repair at the cost of the consumer."

Check with your credit card company and see if they have any extended warranty benefits. When I bought my 30D last year I used my Visa card which gave me one extra year of coverage over Canon's one year (2 years total). I think I have seen 'premium' credit cards that offer more than one year of extra coverage.
Read the fine print and ask questions before you buy.

You will need to find your len's 'date code', not serial # (my O0ops).
Here is Canon's Chuck Westfall's info from RG (03/31/04):
1. The EF 24-70mm f/2.8L USM originally went on sale in the USA in November, 2002.
2. The factory made a "running change" to the design of the name ring attachment system in April, 2003. 24-70L lenses manufactured since the beginning of April, 2003 have already been modified. This was a gap of approximately 5 months rather than 2 as I originally said.
3. The manufacturing code, which is engraved into or printed on the black ring surrounding the rear element of the lens, is UR0402 or higher for modified lenses. If you purchased your EF 24-70L lens within the last 12 months, chances are good that your lens has already been modified.
4. The repair procedure for the name ring on EF 24-70L lenses manufactured before the modification involves three screws, not just one. The holes to accept these screws are already there, so no drilling is required.
As a reminder, Canon does not recommend customers to send in their early-production EF 24-70L lenses for "preventative maintenance" if the name ring is intact. Also, decisions on whether or not to charge customers for the repair of a name ring are made exclusively by the Canon Factory Service Center upon physical examination of the lens and warranty status.

I have a nagging feeling that this is a known issue with early versions of the 24-70L. A quick google search hasn't shown anything, but I'll keep looking. What is your lens' serial #?

I use Canon EOS 10, 10s, 10QD or 30D/BG-E2 + 70-200/2.8 IS, Tamron SP Pro 1.4x TC, 77mm 500D and the Kenko Extension Tube Set (12mm, 20mm & 36mm) for close up work.

I've found that I need to be very aware of my handholding technique to give myself a rock solid platform... Even the smallest movement of my pulse can cause blurred shots at these magnifications.
Using a tripod can be a major PITA with macro, but the results are worth it. I have a Olympus Varimagni Finder (1.2x / 2.5x angle finder) that I sometimes use for critical close focussing.

IS (mode 2) will help with panning shots and you will use IS when shooting motionless mammals at dawn/dusk... Better to have, than have not.
