1.
Are you bonkers? Absolutely!

There is no way you would enjoy any of the places you mentioned in your original post because you'd constantly looking at your watch knowing that you need to move on.

Go to Zion and MAYBE Bryce Canyon and that's it. you will not have time for anything else. Plan a 2nd trip for the Moab area.

 2.
Adoramapix is way better than Blurb. I use them for all my landscape photography books. You can download their color profiles and color match your pictures as long as your monitor is color corrected. Results are outstanding.

Their software needs some getting used to but you should have it down after 30 minutes playing with it.

PS: I tried to use Blurb 3 separate times because I kept reading that people had gotten good results and was disappointed every single time.

 3.
Quote: "What I'm looking for is something decent to catch shots of siberian huskies, which run like the wind "

I own Canon DSLRs and the NEX6. You will not be happy with the NEX6 or any other mirrorless camera for action photography - and that seems to be your main reason for considering the NEX6 or the new A7/r.
Why don't you look at the small DSLR offerings from Canon or Nikon. They will be way better in the AF department, including tracking of dogs and kids. Something like the Canon SL1 would probably work really well for you.

 4.
So, all of you defending Canon - you would NOT buy the next Canon body with improved DR, no banding when shadows are being pushed and higher MPs for landscapes because you are happy with the gear you currently have - right?

Stop kidding yourself, Canon is way behind the competition when it comes to sensor technology. I shoot landscapes and better DR is a major issue for me.

 5.
Let's be honest - when is the last time Canon released anything fundamentally new? They seem to be content with their status quo in the camera market place. Their sensor technology is way behind the competition, their attempt to get a foot in the mirror less market was a total joke and failure. Sony now has a FF mirror less camera while Canon is stuck in the stone ages.
Canon might just too big to get the curve in the ever changing camera landscape.
I am heavily invested in Canon but really feel let down by them. Come on, Canon, get off your behinds and get moving again!

 6.
We used to own a house in Theule sur Mer overlooking the Bay of Cannes. Our former neighbor is still renting out his villa. It has more than two bedrooms though and it might be completely rentet out already for this season but it might be worth a shot.

Just google "Villa Magdalena, Theoule-sur-Mer"

There are many, many other villas for rent. Hopefully you have a big enough budget because none of them are cheap:-)

 7.
This is the craziest workflow I have ever come across. Who edits their pics in-camera? And to top it off uses a camera from a different manufacturer. When I read the question I honestly thought someone was pulling our leg and making fun of us. I am still not convinced that's not the case.

 8.
If you want to do sight seeing I would recommend that you take I17 North with a stop in Sedona (minimum one night, better two) lots to see and do in Sedona, then you should stop at the Grand Canyon South Rim (spend one night) and then off to Las Vegas. In Vegas there's tons to do, esp. if your wife is NOT into landscapes, etc. If you want to get out of town go to Red Rock Canyon and Valley of Fire. There are no accommodations in Valley of Fire - so it is an in-and-out trip but easily doable in one day.

 9.
Check the BDA website - they have bird counts! I typically go in late December early January. It gets below freezing at night and in the early morning hours. Often the Cranes will be standing in frozen ponds in the morning and you can watch them trying to break free, When they finally take off they have ice rings around their legs:-)
Plan on spending at least three days at the reserve. You will need the time to figure out where the best locations are. It changes every year based on which fields they flood. Bring a thermos with coffee or hot tea in the morning and food. It'll be a while before you get back to your hotel. Nearest place to stay is Soccorro.

 10.
How about Diafine? Mix it once and use it forever. 3 minutes in solution A, 3 minutes in Solution B and you're done. Temperature (almost) does not matter. I live in AZ and the"cold" water during the summer months is too warm for most developers but using Diafine I can develop all year long. My batch of Diafine is now two years old and it still works as on day one.
