Hey Scott
I'am an old 300D user and just after I tryed the 20D I did'n like the feel.
It's too light and does not have much Pro feel for Balance.
It..Feels like a Plasic Toy..
If you take that extra money and buy a great lens or a good lens $500 and up you can get better sharpness..Also so PhotoShop is the answer to better photo's...
I can tell you you have a great camera and if you click on the link below you can see how nice it is with good lens.

The real way is to try using this ExpoDisc 82mm
works great and works with raw files too.

If these guys are all to much, What I try is use asa 200 film and a tripod and fld filter and see if you can scan the film to a see better color cast. Also each bulb in the celling may be different temp. So then what to do is shoot with a flash to fill it the people you want in the photo's.
Or try to copy and past them in to a digital back drop...
