Better to underexpose or overexpose?

I find that boosting shadows 1 stop with "Levels" is never a problem - with highlights, when they're gone, they're gone! You can put tone back into a blank highlight, but not detail!</p>

Sorry to detour this thread, but I can't resist asking about the Kevin Kubota video. The second example makes Lightroom look useful, but his first example improved the image very little, and could likely have been done more easily with the Curves dialog in Photoshop. Am I off base in thinking so?
