In my experience (I'm sure others have different ones), such assistants usually also shoot. Try looking around for classifies ads or posts of photographers seeking second shooters, if this interests you. Fees are usually nominal, but enough to cover your expenses (not including equipment).

If working in a pro lab fit your schedule you could learn about different paper's, the process, toning and printing techniques and much more that could be very valuable. You would also meet professionals that do business there and get to know them and possibly volunteering to be an assistant for a shoot or two. Just hooking up with somebody from the phone book or internet may not work out. The chances are they are not going to be that skilled, nice or even safe to be around.
