1.
If you really want top notch tutorials, on everything, not just portraiture, I would seriously suggest using Lynda.com. You have to pay for it but I use it all the time to learn new things about the software I am using. The photoshop tutorials on there are priceless, and they are very organized so you can find exactly what you need to learn. Its basically like a full digital photography education, for way cheaper.

If you really dont have it in your budget then you are right, it is hit and miss online with the tutorials. Some people are just plain bad, and some really know what they are talking about. This one is on Lunacore goes over the very basics of facial retouching. http://www.lunacore.com/photoshop/tutorials/tut020.htm

 2.
It sounds to be that as a beginner in the photo/video realm, you are going to want simplicity. Where I can agree with Craig that a professional video camera will outdo a dSLR shooting 1080p. If it is not for the silver screen, and simplicity is a necessity, an HD dSLR such as the 7d is perfect for the job. I cannot speak to the Sony as I have not used it. But as far as the Canon selections go, I could not be happier with the video performance. I agree, however, that if the camera is just for one project, definitely rent. You can rent a 7d for very affordable prices, I would suggest checking out www.LensProtoGo.com . Their service has worked out for me many times in the past, and the gear is always in mint condition.

The problem with using compact cameras, is that the aperture is typically limited the farther you zoom out. If you want a very blurred background, I would rent a Canon 7d, shoot in HD, and rent a couple lenses... say a 35mm 1.4, a 50mm 1.2, and an 85mm 1.2, that way you have a wide angle, a standard frame, and a telephoto, all capable of producing the effect you desire.

Good luck!
