1.
I went to Italy last may: Venice, Rome, Tuscany, Florence, Cinque Terre.
I brought two lenses with my D90: Nikon 18-200 VR II and Sigma 8-16.
You can read this story here on my blog. There is one chapter that talks about lenses in particular.
2.
I am somewhat in the same situation as you with my D90 although I am not looking at a FF body. I will wait a few more month to see if the rumored D400 comes out, otherwise I might go for the D7000. At a native 64,000 ISO it is quite good.

I also personally used on my trip to Italy. Basically used it simply as a hard disk, did not view pics from it.
I would import pics from my SD card to the HyperDrive, then from it to my iPad 1 for viewing.

 4.
I own a Sigma 8-16mm and I love it. I was sort of surprised to use it that much during my last vacation. Like in life, I say that for wide angles, "size does matter" ;-)

 5.
I have had my Nikon D90 for almost two years now. I shoot birds, churches and urban scenes. I always wanted to go into portraiture but found the subject to be a tough one to master.
For Christmas, my spouse suggested that I bring my portable studio to the family reunions in order for me to practice. This gave me the opportunity to shoot and learn some.
