1) IMO, cell phone balances the whole picture, creating a triangle: cup - face - cell. Without cell it would be a diagonal: face - cup and the whole picture will fall to the left. Don't you think so ?

One of the rules for BW photography says - capture black on white and white on black :) From this POV and in my opinion, this photo could be even more gorgeous if model would put that black glove (or whatever it is on her right hand :) on her other (her left) hand. Don't you think so ?

This is technique if mixed light - flash and constant light. First, you fire flash and capture face then you just do what you want - zoom and/or shake until the exposure is over :) In my case it was about 3 sec.
