1.
I use a Gitzo 1541T tripod (very small and light) to do panoramic and HDR. It works great. I had trouble with stability with the Gitzo ballmount, so I'm switching to a RSS BH40LR (see prev post).
However, for HDR I've had some success with hand-held, burst mode (several shots quickly), using the bracketing feature on my Canon 50D. I use Photoshop CS4 and its HDR matches up several shots quite well, even if they aren't exactly the same. BTW, you may want to hold aperture constant and vary the speed - so depth of field remains the same for all shots. Of course, a tripod should always be used if possible, but if not possible, try this.

 2.
I have a Canon 50D with 24-105 EF lens, Gitzo 1541T Carbon Fiber tripod with 17880QR ballhead. The tripod uses the Quick Release 5370C. When I use this setup, especially tilted for a vertical shot, the camera rotates on the quick release unless I hand support it (sort of ruins the benefit of the tripod). How to secure?
I could use a big screwdriver, but that seems a little crude. The quick release has a video pin, which mates with my videocam, but the 50D doesn't have this opening. Should I drill it out? I'm a little nervous about that, though I could do it if that's the fix. Still seems a bit crude. Any other options? Thanks, Jim.
