I agree about Sandy Hook. It is a seven-mile spit of non-commercial park land that runs North-South, allowing for great sunrises -- and great sunsets. The one restaurant which exists on the Hook as part of the Park Service features a salute specifically to the sunset every night. I live right at the Hook and don't go more than a week without a visit 12 months a year.
Adjacent to Sandy Hook is Highlands (on the ocean) and one town up, Atlantic Highlands (further up Sandy Hook Bay). There are spots in both those towns where you can also get nice sunsets.
