I just got back from visiting Istanbul, Santorini and Athens. All three are amazing...Athens less so, although the Acropolis took my breath away. Tip: you can visit Acropolis for free on Sundays, otherwise it's $12 Euros, I think. I have some photos in my portfolio from my trip if you're interested or curious.

I agree with what everyone said above, especially either taking lots of memory cards or downloading nightly. Santorini alone will have you in a photographer's paradise during your entire stay and you'll be upset if you find yourself running out of space for all the photos you'll want to take.
