1.
I just tried my 90mm SA on my Ebony SV45U2. When focused at infinity, I can get a good deal of swing on the front standard (1/2" either way). Of course, you could get more if focused closer, with the lens extended more.
I then tried a 90mm Angulon which is mounted in a recessed lensboard. I could get considerable more swing. I think a recessed lensboard would help if you want to avoid the procedure outlined to lean the front standard backwards (which I find inconvenient and awkward). A bag bellows would not help, as the issue is not compression of the bellows, but the mechanics of the camera.
Good luck with the camera; it's a great one.

 2.
Cold at night; beautiful during the day. I like the area above the tunnel. Go in the canyon right after the tunnel/bridge and walk up stream (down stream will lead you to a very big fall!!!). Further up the red rock with the small evergreens late in the day. You might also go to Snow Canyon State Park, near St. George. Zion Canyon gets light late in the day, so you can sleep late, or find somewhere else to photo. You might go out to Grafton, but I think they have tightened things up and it's hard to photo there now, but watch "Butch Cassidy and the Sundance Kid" before you go and enjoy remembering the locale. There's a restaurant I like in Springdale: the Switchback. I also like Flanigans and place with two names: Rock and Sand or something like that. A great place. Enjoy. I've stayed at Flanigans and at the Zion loge. Both are OK. I stayed at another place years ago where the shower in the room next door bubbled up in the sink in my room. I would not go there again!!!

 3.
I think you have the wrong Jobo tank. The 3006 only holds six 4x5 or 5x7. The 3005 will hold five 5x7 or 8x10. You're asking for trouble if you tried to get more films in the tank than they are designed for.
