I think they are just drying trout and then may smoke them. Or, may drying and smoking are done simultaneously. GJ

I actually think that it is a very appropriate title and they look like salmon to me the flesh is first rubbed with salt and in this case I think the fish is air dried. Gunga Jim this is a good and unusual composition, as well as a great delicacy. The focus is great and the DOF is very good. 6/6.
