I don't think the DOF is too shallow at all, that's what culinary photography's is about. Focusing (litterally) on the main food. Even though you've made the crab leg the point of focus in this photo, I think it could be sharper. I look forward to see more culinary photo's from you.

Thanks Jared....you are right in your comment....however it has been my experience that certain clients follow the trend in photography like people follow fashion etc......and in this case my main concern was to keep the claw and the middle of the chopsticks in focus as much as possible. Using the 5x4...I tilted the lens panel and then swag it a bit to obtain the DOF effect that I wanted. 2 flash units one under and behind, the key light to the left and above eye level.

Lines and placement of subjects are perfectly composed in this photo. It's simple and elegant. I like the composition because it draws the viewers to main subjects over and over again. Speaking from someone who enjoys dining out and culinary photography, your photo does make me want to pick up the chopstick and start eating :o). BTW, thanks for sharing your technique. Constructively: Again, very nice layout but I'd say there is a slight lack of light in the key areas. Also I am not sure about the colored gradients. Then again making the B&W might cause a total lack of ambience. It's trial and error.
