I think it is the prevalence of the Tuscany color palette like mustard, pale gold, earthy reds and cream color on the Byzantine influenced architecture that makes the sights of Venice so intoxicating. There are places you feel you could be strolling the Casba with Ali Baba and at once sipping chianti with Leonardo in Florence.
