This one made from a VietNamese recipe which called for soaking the cut-up eggplant

in salted water, steam them after coat them with some sesame oil and then stir-fried in

garlic with oyster sauce. Taste great to me with some pepper flakes!

Thanks Greg & Verena! I like eggplant but I've been eating the Chinese made one which call for deep frying the eggplant first and then stir-fried it with what ever one likes. It always tastes like it soak up all the oil (like a sponge)  even though it tastes good. This recipe works for me since after cut-up you soak it up in a bit of salted water for 5, 10 minutes and then  season it with some salt/pepper and sesame oil (to taste) just to coat the eggplant and tehn steam them. When they are soft, take them out and stir-fried with what ever you like, in this case I just put in some oyster sauce, flip the pan a few times to coat the eggplant (using a spoon to mix may break them up) and .. voila!

Thanks for the recipe - did you know eggplant lowers blood pressure? Anyway, yes, we do grow all our own veggies - even have fresh greens all winter(and we are definitely NOT in sunny Cal :)

We pretty much raise everything we eat, except for things like oil, flour (ww) and chocolate....
