There might be predators below them so they try to escape them by jumping into the air.

 

If I may, I suggest you to take a tent, find a place to stay there for some days, find the places where they usually swim (after some time you will see a pattern), you could also throw some bread there to allure them in the same place and before shooting try focusing on the ripples. As close you get to them the better the image will be.
