HuoGuo (Hot Pot, SiChuan style)

HuoGuo is a traditional meal especially in SiCHuan province and Shaanxi province. It is quite similar to meat fondue if you have ever had that except that inside is boiling broth rather than boiling oil. You take raw foods and place them in either side of the pot (most have two sides in restaurants (one is very "la" or spicy while the other is not) but only one in people's houses) to cook then use your chopsticks to get the cooked food out. Often there are souces (a peanut sort of oily thing) to dip the finished product in before eating it. This was my student's fairwell party for me.

I don't like the composition. The guys arm is in the greens man. It totally obscures the food you are trying to photograph.
