mark_schafer1
Karl Blossfeld is a classic, i do love Irving Penn's Flowers (mostly for Vogue US, the book is out of print but wort every penny) and of course Nick Knight. His book Flora is just outstanding and the work that lead to it, working with the British Natural History Museum, is rarely seen.
stephenwood
A favorite of mine is Kenro Izu. His plat/plad prints are incredibly beautiful.
bruce_watson1
Imogene Cunningham was one of the great masters of this genre. One can learn a lot studying her prints. She was using LF, not sure the sizes. One of my favorite contemporary LF photographers who does some of this kind of work is Ken Lee: http://www.kenleegallery.com/html/botanicals/botanicals.html

dickhilker
Not that he's famous, but you might like to see some of these. However, they're not all made with LF: http://www.photo.net/photodb/presentation.tcl?presentation_id=288186
