1. Precision Camera Works is good with Mamiya. I suspect there are still quite a few good Mamiya techs out there, but make sure the website of whomever you choose mentions Mamiya as one of their specialties.
 2.

Is there any way to compare current Canon DSLR's for IQ at high-ISO? I know reviews usually look at that, but not in a systematic way that would allow me to compare cameras.

https://www.dpreview.com/reviews/image-comparison

Choose the 5D4 in one window, the 6D in another, bump the ISO up to 6400 or 12800 whatever, and click-drag the images to compare.

Since the size of the images is different owing to the 5D4's higher resolution, it can be hard to compare (in fact, the 5D4 will likely look worse at full resolution because everything, including noise, is larger). In that case, just download both images and downsize the 5D4 image to match the resolution of the 6D.

Only you can decide if the difference is significant enough to justify the $2500 you'll have to add to the ~$1000 you'll get for selling your 6D.

 3.

"I would be very hesitant to use a PC formatted drive for an extended period of time on a Mac. There is a reasonable chance that some of files will become corrupted."

I don't know if the OP is leaving the PC platform entirely, but "formatting a separate drive for Mac and moving all of the PC files over to it" is of no use to me. I use PCs and Macs 50% of the time each (going back and forth on them multiple times a day) and I want all of my external drives and all of my files readable on both OS's all of the time.

I've been using Paragon on my Macbook Pro, for 2+ years, daily, with probably 10-15 different external hard drives that originated in Windows 7, 8, and 10 format (all are 1, 2, 4, or 8TB drives).

Never a single problem, let alone a "corrupted file"; my Mac with Paragon reads those drives just as well as do my PCs that formatted those drives.

 4.
I had the same issue when I switched to Mac; frustrated the heck out of me that I could read files on the external drives but couldn't save to them.
Then I found out about Paragon and for a one-time $20 charge I can now write seamlessly from my Mac onto external drives that were created with a PC. No reformatting required, so zero risk of losing files.
https://www.paragon-software.com/home/ntfs-mac/eshop.html
Best 20 bucks I could spend. For all I know there are other programs out there, but I can't picture a more transparent experience. Never any formatting changes involved whether I write to external drives from the Mac or from a PC.
