1.
I've had good results with my V700 and 120 using betterscanning.com 120 holder and ANG glass. The combination holds the film flat, unlike the Epson holder, and allows "infinite" height adjustment via little screws. A fiddly job, but when finished the scans are sharp corner to corner.
Some of my 35mm screens have been excellent, some not. If the film has a lengthwise curl there are problems..... I should probably get ANG strips for those holders, too.

 2.
The Pentax LX will do double exposures with supposedly good registration. It also has TTL exposure and flash, but it isn't cheap and CLA's are costly, as is true of most pro gear.

 3.
Back in the day I processed 100 feet of home-loaded Ektachrome 4 35mm rolls at a time in SS tanks with no problems. I'd suggest a dry run with empty reels and plain water to get an idea of filling and emptying times, and you can find the best angle to minimize fill time. As an earlier poster suggested, really short times are a problem since the fill/empty time becomes a sizable fraction of the processing time.
