1. Get the 7D Mark II. Early reports suggest you can shoot @ 1600 ISO with very little noise....this will help with your low light shooting. The current 7D's IQ starts to degrade above 800 ISO...so a significant improvement. If you only do BIF occasionally....you'll likely need all the AF help you can get. The 7D Mark II's AF is amazing (fast/accurate). I shoot BIF a lot and often fight with my 7D's AI Servo issues tracking fast moving subjects. The 7D Mark II's sophisticated AF will vastly improve AI Servo tracking.
 2.
Since your ultimate goal is to be a professional wedding/family photographer....have you considered a 6D instead of a crop sensor? As you note, your animal/nature shots are "in different lights"....if so,while a 7D is good for wildlife/sports,image quality suffers as the light diminishes. I rarely,if ever, go over 800 ISO with my 7D because IQ suffers dramatically.
The 6D might, also, work for your animal/nature photos, especially in low light...unless 'animals' include birds and other fast moving creatures...then the 6D's AF is unlikely to be able to track their quick movements. Fast moving subjects would be better tracked with one of your crop choices.....but then IQ takes a hit in low light. Bottom line is there is no 'one camera does it all'.
Based on your budget, I realize the 6D may be out of reach right now...so of your 3 choices, the 70D (better sensor than 7D) may serve you best while in school. Agree with JDM...check with your school for their recommendations/deals. Good luck!

 3.
If there is any doubt...then a quick flip through the following will tell you where this camera is targeted:
http://www.learn.usa.canon.com/resources/articles/2014/eos7dmk2_afGuidebook.shtml
Canon has done their homework and has solicited the input of hundreds of experienced sport/wildlife photographers....and the 7D Mk II is the result. Guess what wasn't important to them? .....flip out screen and/or wi-fi.
I,like David, try to avoid going ISO's above 800 with my 7D....and AI servo inaccuracy can be frustrating at times.
The 7D Mk II will focus like a $6.5K 1DX ,for what I paid for my 7D in 2009! Focus @ -3EV, f/8 ...... up to 10 frames/sec...silent shutter mode.......wow!
Don't recall anyone lamenting the fact that a 1DX doesn't have a flip screen.
Can't wait to introduce the 7D Mk II to my 500 f/4.
